Ingredients

  • 250 grams Gruyère cheese
  • 250 grams Emmental cheese
  • 150 grams Butterkäse (or Havarti cheese)
  • 250 ml German beer (preferably a lager or wheat beer)
  • 1 clove Garlic
  • 2 tablespoons Cornstarch
  • 2 tablespoons Cold water
  • 0.25 teaspoons Ground nutmeg
  • 0.25 teaspoons Freshly ground black pepper
  • 1 tablespoon Lemon juice
  • 1 loaf Crusty bread (for dipping)
  • 2 sausages Cooked German sausages (e.g., bratwurst or knackwurst, for dipping)
  • 200 grams Steamed vegetables (e.g., broccoli, carrots, or cauliflower, for dipping)

Directions

Step 1

Grate the Gruyère, Emmental, and Butterkäse cheeses, and set them aside in a large bowl.

Step 2

Peel the garlic clove and cut it in half. Rub the inside of a fondue pot or heavy-bottomed saucepan with the cut side of the garlic. Discard the garlic or save for another use.

Step 3

Heat the fondue pot over medium heat and add the beer. Warm it gently until it starts to steam, but do not let it boil.

Step 4

In a small bowl, whisk together the cornstarch and cold water to create a smooth slurry. Set aside.

Step 5

Gradually add the grated cheeses to the warm beer, stirring constantly in a figure-8 motion to help the cheese melt evenly.

Step 6

Once the cheese mixture is smooth and creamy, stir in the cornstarch slurry. Continue cooking for 1-2 minutes, allowing the fondue to thicken slightly.

Step 7

Add the nutmeg, black pepper, and lemon juice, and stir until combined. Adjust seasoning to taste, if necessary.

Step 8

Transfer the fondue pot to a heat-proof stand or fondue burner to keep it warm while serving.

Step 9

Serve immediately with cubes of crusty bread, sliced German sausages, and steamed vegetables for dipping. Use fondue forks or skewers for dipping and enjoy!
