Ingredients

  • 4 medium carrots
  • 2 tablespoons fresh cilantro
  • 1 small green chili
  • 2 tablespoons lemon juice
  • 0.5 teaspoons salt
  • 0.5 teaspoons sugar
  • 1 teaspoons mustard seeds
  • 1 tablespoons oil (preferably peanut or vegetable)
  • 0.25 teaspoons asafoetida (hing)
  • 2 tablespoons grated coconut (optional)

Directions

Step 1

Wash and peel the carrots. Grate them finely using a box grater or food processor and set them aside in a medium-sized mixing bowl.

Step 2

Finely chop fresh cilantro and the green chili (remove seeds if you prefer less heat). Add them to the grated carrots.

Step 3

In a small bowl, mix together the lemon juice, salt, and sugar until the sugar dissolves. Pour this mixture over the grated carrots and toss well to combine.

In a small pan, heat the oil over medium heat. Once the oil is hot, add the mustard seeds and let them sputter for about 30 seconds.
