Directions

Step 1

Peel the potatoes and cut them into bite-sized cubes. Set aside in a bowl of water to prevent browning.

Finely dice the onion and mince the garlic. Set aside.

Dice the tomatoes into small pieces and set aside.

In a large skillet or saucepan, heat 2 tablespoons of oil over medium heat.
