  • 3 carrots, peeled and chopped into 1-inch pieces
  • 2 celery stalks, chopped into 1-inch pieces
  • 4 potatoes, peeled and cubed
  • 1 pint Guinness stout beer
  • 3 cups beef broth
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 2 bay leaves
  • 1 tsp fresh thyme, chopped
  • 2 tbsp parsley, chopped (for garnish)

Directions

Step 1

Season the beef cubes with salt and pepper, then toss them in flour until evenly coated.

In a large, heavy-bottomed pot or Dutch oven, heat the olive oil over medium-high heat. In batches, sear the beef cubes until browned on all sides. Transfer the browned beef to a plate and set aside.

In the same pot, add the diced onion and sauté for 3-4 minutes, until softened. Add the minced garlic and cook for another 1-2 minutes, until fragrant.
