Ingredients

  • 2 pounds Pork loin
  • 1 cup Guinness beer
  • 0.5 cup Honey
  • 0.25 cup Soy sauce
  • 2 tablespoons Dijon mustard
  • 3 cloves Garlic cloves, minced
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Fresh rosemary, chopped

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Pat the pork loin dry with paper towels and season it generously with salt, black pepper, and fresh rosemary on all sides.

Step 3

In a large oven-safe skillet or roasting pan, heat the olive oil over medium-high heat. Sear the pork loin for 2-3 minutes on each side until it is golden brown.

Step 4

Remove the pork loin from the skillet and set it aside on a plate.

Step 5

In the same skillet, reduce the heat to medium and add the garlic. Sauté for about 1 minute until fragrant.

Step 6

Add the Guinness beer, honey, soy sauce, and Dijon mustard to the skillet. Stir well to combine and bring to a gentle simmer.

Step 7

Return the pork loin to the skillet, spooning some of the glaze over the top.

Step 8

Transfer the skillet to the preheated oven and roast for approximately 60-70 minutes, basting the pork with the glaze every 15 minutes. Use a meat thermometer to check for doneness; the internal temperature should reach 145°F (63°C).

Step 9

Once cooked, remove the pork loin from the oven and let it rest for 10 minutes before slicing.

Step 10

Serve the pork loin with the remaining glaze drizzled on top. Pair with roasted vegetables or mashed potatoes for a complete meal.
