  • 15 oz black beans, drained and rinsed
  • 15 oz kidney beans, drained and rinsed
  • 1 bottle Guinness beer
  • 1 cup beef stock
  • 2 tbsp chili powder
  • 1 tbsp ground cumin
  • 1 tsp paprika
  • 0.5 tsp cayenne pepper
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 garnish optional toppings: shredded cheddar cheese, sour cream, sliced jalapeños, chopped cilantro

Directions

Step 1

Trim any excess fat from the filet mignon and cut it into small, bite-sized cubes.

Step 2

Heat 1 tablespoon of olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Sear the filet mignon cubes in batches until browned on all sides, about 2-3 minutes per batch. Remove the meat and set aside.

Step 3

Add the remaining 1 tablespoon of olive oil to the pot. Sauté the diced yellow onion, red and green bell peppers, and minced garlic until softened and fragrant, about 5 minutes.
