Ingredients

  • 3 cups rolled oats
  • 1 cup raw almonds
  • 0.5 cup pumpkin seeds
  • 0.5 cup unsweetened shredded coconut
  • 2 tablespoons chia seeds
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon salt
  • 0.25 cup coconut oil
  • 0.3 cup maple syrup
  • 1 teaspoon vanilla extract
  • 0.5 cup dried cranberries

Directions

Step 1

Preheat your oven to 325°F (160°C) and line a large baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the rolled oats, almonds, pumpkin seeds, shredded coconut, chia seeds, cinnamon, and salt.

Step 3

In a small saucepan over low heat, melt the coconut oil. Add the maple syrup and vanilla extract, stirring until well combined. Remove from heat.

Pour the coconut oil mixture over the dry ingredients and mix thoroughly to coat everything evenly.

Spread the granola mixture evenly onto the prepared baking sheet, pressing it down lightly with the back of a spatula.
