Ingredients

  • 250 g Dried haricot beans
  • 250 g Dried butter beans
  • 500 g Smoked or salted pork (belly or collar)
  • 1 large Onion
  • 3 medium Carrots
  • 1 medium Turnip (or swede)
  • 1 Bay leaf
  • 1.5 liters Chicken or vegetable stock
  • 0.5 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Parsley (optional, for garnish)

Directions

Step 1

1. Place the haricot and butter beans in a large bowl. Cover them generously with water and soak them overnight (about 8 hours).

2. The next day, drain and rinse the beans thoroughly. Set them aside.

3. In a large oven-safe pot or slow cooker, add the pork. If using salted pork, rinse it under cold water before adding it to the pot.

4. Peel and roughly chop the onion, carrots, and turnip into bite-sized pieces. Add them to the pot.

5. Add the soaked beans to the pot along with the bay leaf.

6. Pour in the chicken or vegetable stock until the ingredients are fully submerged, about 1.5 liters.

7. Season with salt and black pepper. Stir gently to combine.

8. Cover the pot with a lid and place it in a preheated oven at 120°C (250°F), or set your slow cooker to low. Allow the bean jar to cook gently for 6–8 hours, stirring occasionally to ensure the beans do not stick to the bottom.

9. Once the beans are tender and the pork is falling apart, remove the bay leaf and taste for seasoning. Adjust with additional salt and pepper if necessary.
