Ingredients

  • 2 large sweet potatoes
  • 3 medium ripe bananas
  • 0.5 cup granulated sugar
  • 2 cups water
  • 2 whole cinnamon sticks
  • 1 teaspoon vanilla extract
  • 1 teaspoon orange zest
  • 0.25 teaspoon salt
  • 0.25 cup raisins (optional)

Directions

Step 1

Peel the sweet potatoes and cut them into 1-inch cubes.

Step 2

Peel the bananas and slice them into 1/2-inch thick rounds.

Step 3

In a medium saucepan, combine the water, granulated sugar, cinnamon sticks, and salt. Bring the mixture to a boil over medium heat, stirring occasionally to dissolve the sugar.

Step 4

Once the sugar has dissolved, add the sweet potato cubes to the pot. Reduce the heat to medium-low and cover. Let the sweet potatoes simmer for about 20 minutes, or until they are tender when pierced with a fork.

Step 5

Add the banana slices, vanilla extract, and orange zest to the pot. If using raisins, add them now as well.

Step 6

Gently stir to combine all the ingredients, being careful not to mash the sweet potatoes or bananas.

Step 7

Let the mixture cook uncovered for an additional 5-10 minutes, allowing the bananas to soften slightly and the flavors to meld together.

Step 8

Remove the cinnamon sticks from the pot and discard them.

Step 9

Spoon the sweet potato and banana mixture into serving bowls, along with some of the syrup from the pan.

Step 10

Serve the dessert warm and enjoy!
