Ingredients

  • 2 cups Jasmine rice
  • 3 cups Water
  • 2 tablespoons Achiote seeds (annatto seeds)
  • 2 tablespoons Vegetable oil
  • 0.5 large Onion, finely chopped
  • 2 cloves Garlic, minced
  • 1 teaspoon Salt

Directions

Step 1

Place 2 tablespoons of achiote seeds and 2 tablespoons of vegetable oil in a small pan over medium heat. Gently heat the mixture until the oil turns a deep reddish-orange color. Strain the oil into a bowl, discarding the seeds, and set aside.

Step 2

Rinse the jasmine rice under cold water until the water runs clear to remove excess starch. Drain well.

Step 3

In a medium-sized pot, heat the achiote-infused oil over medium heat. Add the finely chopped onion and minced garlic, and sauté until the onion becomes translucent and fragrant, about 2-3 minutes.

Step 4

Add the rinsed jasmine rice to the pot, stirring to coat the grains evenly with the flavored oil.

Step 5

Pour in 3 cups of water and add 1 teaspoon of salt. Stir well.

Step 6

Bring the pot to a gentle boil over medium heat, then reduce the heat to low. Cover the pot with a tight-fitting lid and let the rice cook undisturbed for 18-20 minutes, or until all the water is absorbed and the rice is tender.

Step 7

Once cooked, remove the pot from heat and let the rice sit covered for an additional 5 minutes to steam. Fluff the rice with a fork before serving.
