Ingredients

  • 3 large ripe avocados
  • 2 whole jalapenos
  • 4 stalks scallions (green onions)
  • 0.25 cup fresh cilantro leaves
  • 1 large lime
  • 0.5 teaspoon kosher salt
  • 0.25 teaspoon ground black pepper
  • 1 clove garlic clove (minced)
  • 1 teaspoon extra virgin olive oil

Directions

Step 1

Preheat a grill pan or open flame to high heat.

Step 2

Place the whole jalapenos and scallions onto the grill or directly over the flame, turning occasionally, until they are lightly charred and softened (about 3-5 minutes). Remove from heat and let cool slightly.

Step 3

Once cool enough to handle, finely chop the charred jalapenos and scallions. Remove the seeds from the jalapenos if you prefer less heat.

Step 4

Cut the avocados in half, remove the pits, and scoop the flesh into a medium-sized mixing bowl.

Step 5

Mash the avocado with a fork or potato masher to your desired level of smoothness. Leave it slightly chunky for texture.

Step 6

Finely chop the cilantro leaves and add them to the bowl with the avocado.

Step 7

Juice the lime and add the fresh lime juice to the bowl. Stir to combine.

Step 8

Add the chopped charred jalapenos, scallions, minced garlic, kosher salt, black pepper, and olive oil to the mixture. Stir until well combined.

Step 9

Taste and adjust the seasoning with additional salt, pepper, or lime juice as needed.

Step 10

Serve immediately with tortilla chips, veggies, or as a topping for tacos and other dishes. Enjoy!
