Ingredients

  • 6 pieces Large eggs
  • 1 piece Ripe avocado
  • 1 tablespoon Fresh lime juice
  • 2 tablespoons Red onion, finely chopped
  • 1 tablespoon Cilantro, chopped
  • 0.5 piece Jalapeño, finely diced (optional)
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.25 teaspoon Paprika, for garnish

Directions

Step 1

Place the eggs in a medium-sized saucepan and cover them with water. Bring to a boil over medium-high heat.

Step 2

Once the water begins to boil, turn off the heat, cover the saucepan with a lid, and let the eggs sit for 10 minutes.

Step 3

Drain the hot water and transfer the eggs to an ice bath to cool for about 5 minutes. Once cooled, peel the eggs carefully.

Step 4

Slice each egg in half lengthwise and gently scoop out the yolks, placing them in a medium-sized bowl. Set the egg whites aside on a serving plate.

Step 5

Cut the ripe avocado in half, remove the pit, and scoop the flesh into the bowl with the yolks.

Step 6

Add the lime juice, finely chopped red onion, chopped cilantro, diced jalapeño (if using), salt, and black pepper to the yolk and avocado mixture.

Step 7

Mash the ingredients together with a fork until smooth and well combined. Taste and adjust seasoning if necessary.

Step 8

Spoon or pipe the guacamole mixture into the hollowed-out egg whites, filling each cavity generously.

Step 9

Sprinkle a small pinch of paprika on top of each egg for garnish.

Step 10

Chill the deviled eggs in the refrigerator for at least 20 minutes before serving. Enjoy!
