Ingredients

  • 4 slices Sourdough bread
  • 4 ounces Gruyère cheese
  • 4 tablespoons Apricot jam
  • 3 tablespoons Walnuts
  • 2 tablespoons Unsalted butter

Directions

Step 1

Preheat a non-stick skillet or a panini press over medium heat.

Step 2

Toast the walnuts in a dry skillet over medium heat until fragrant, about 2-3 minutes, stirring frequently. Remove from the heat and let cool slightly before roughly chopping.

Step 3

Spread 1 tablespoon of apricot jam on one side of each slice of sourdough bread.

Step 4

Layer 2 ounces of Gruyère cheese on top of the apricot jam on two slices of the bread. Sprinkle 1.5 tablespoons of the toasted walnuts evenly over the cheese on each slice.

Top with the remaining two slices of bread, apricot jam side facing inward, to create two sandwiches.

Spread 1 tablespoon of butter evenly on the outside of each sandwich (1/2 tablespoon per slice).

Place the sandwiches onto the preheated skillet or panini press. If using a skillet, press down gently with a spatula or another heavy pan to flatten slightly.

Step 8

Cook for 2-3 minutes per side, or until the bread is golden brown and crispy, and the cheese is melted.

Step 9

Remove the panini from the skillet or press, let them rest for a minute, and then slice in half. Serve warm.
