Ingredients

  • 1 pound ground venison
  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 2 garlic cloves, minced
  • 1 medium carrot, peeled and diced
  • 1 celery stalk, diced
  • 1 cup frozen green beans
  • 14.5 ounces canned diced tomatoes, drained
  • 2 tablespoons tomato paste
  • 1 cup beef or venison stock
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup cheddar cheese, shredded
  • 3 cups mashed potatoes, prepared

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Heat the olive oil in a large skillet over medium heat.

Step 3

Add the diced onion and sauté for 2-3 minutes until soft and translucent.

Step 4

Stir in the minced garlic and cook for 30 seconds, or until fragrant.

Step 5

Add the ground venison to the skillet and cook, breaking it apart with a spatula, until browned and no longer pink.

Step 6

Stir in the diced carrot, celery, and green beans, cooking for an additional 5 minutes to soften the vegetables.

Step 7

Mix in the diced tomatoes, tomato paste, stock, thyme, paprika, salt, and black pepper. Simmer the mixture for 10 minutes, stirring occasionally.

Step 8

Transfer the venison mixture to a 9x13-inch baking dish, spreading it out evenly.

Step 9

Top the mixture with the prepared mashed potatoes, spreading them gently to entirely cover the venison layer.

Step 10

Sprinkle the shredded cheddar cheese evenly over the mashed potatoes.

Step 11

Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.

Step 12

Remove the casserole from the oven and let it cool for 5 minutes before serving.
