Ingredients

  • 4 pieces Sweet bell peppers (red, yellow, or orange)
  • 1 pound Ground turkey
  • 1 cup Cooked rice (white or brown)
  • 1 cup Diced onion
  • 1 cup Diced tomatoes (canned or fresh)
  • 2 cloves Minced garlic
  • 2 tablespoons Olive oil
  • 1 teaspoon Paprika
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 cup Shredded mozzarella or cheddar cheese
  • 2 tablespoons Chopped fresh parsley (for garnish, optional)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Wash the bell peppers, slice off the tops, and remove the seeds and membranes inside. Set the hollowed-out peppers aside.

Step 3

Heat olive oil in a large skillet over medium heat. Add the diced onion and minced garlic, and sauté for 3-4 minutes until fragrant and translucent.

Add the ground turkey to the skillet and cook for 6-8 minutes, breaking it apart with a spoon, until browned and fully cooked.

Stir in the diced tomatoes, cooked rice, paprika, Italian seasoning, salt, and black pepper. Mix well and let it simmer for 2-3 minutes. Remove the skillet from heat.

Place the hollowed-out bell peppers into a baking dish, standing upright.
