Ingredients

  • 1 lb Ground turkey
  • 1 small Onion, finely chopped

  • 0.75 cup Breadcrumbs

  • 0.5 tsp Black pepper
  • 3 tbsp Olive oil
  • 2 tbsp Butter
  • 8 oz Mushrooms, sliced
  • 2 tbsp Flour
  • 1.5 cups Chicken stock
  • 0.5 cup Heavy cream
  • 0.5 tsp Thyme, dried
  • 2 tbsp Parmesan cheese, grated

Directions

Step 1

In a large mixing bowl, combine ground turkey, finely chopped onion, minced garlic, fresh parsley, egg, breadcrumbs, salt, and black pepper. Mix until well incorporated.

Step 2

Form the mixture into small round patties, about 2 inches in diameter and 1 inch thick. Set aside on a plate.

Step 3

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the turkey croquettes in batches and cook for 5-6 minutes per side, or until golden brown and cooked through. Remove from the skillet and keep warm.
