Ingredients

  • 2 cups (packed) Fresh cilantro leaves
  • 1 tablespoon Coriander seeds
  • 2 small Green chilies
  • 1 teaspoon Grated ginger
  • 2 small Garlic cloves
  • 2 tablespoons Lemon juice
  • 2 tablespoons Roasted peanuts
  • 0.5 teaspoon (or to taste) Salt
  • 2 tablespoons (adjust as needed) Water
  • 1 teaspoon Vegetable oil

Directions

Step 1

Rinse the cilantro thoroughly under cold water and remove any tough stems. Pat dry with a clean kitchen towel or paper towel.

Step 2

In a small skillet, heat the vegetable oil over medium heat. Add the coriander seeds and toast them for 1-2 minutes until fragrant, stirring continuously to prevent burning. Remove from heat and allow to cool slightly.

Step 3

In a blender or food processor, combine the cilantro leaves, toasted coriander seeds, green chilies, grated ginger, garlic cloves, lemon juice, roasted peanuts, and salt.

Step 4

Add 2 tablespoons of water to the blender to help blend the mixture. Blend until the chutney reaches your desired consistency. You can make it smooth or slightly coarse based on preference. If needed, add a bit more water, 1 tablespoon at a time, to achieve the right texture.

Step 5

Taste the chutney and adjust the salt, lemon juice, or spice level if needed by adding more green chilies.

Step 6

Transfer the chutney to a serving bowl and serve immediately, or store it in an airtight container in the refrigerator for up to 3 days.
