Ingredients

  • 500 grams Ground chicken
  • 2 tablespoons Vegetable oil
  • 4 pieces Garlic cloves
  • 5 pieces Bird's eye chilies
  • 2 tablespoons Oyster sauce
  • 1 tablespoon Soy sauce
  • 1 teaspoon Fish sauce
  • 1 teaspoon Sugar
  • 1 cup Holy basil leaves
  • 2 tablespoons Water
  • 4 servings Steamed jasmine rice (for serving)

Directions

Step 1

Finely chop the garlic cloves and bird's eye chilies together to create a paste. Adjust the number of chilies depending on your preferred spice level.

Step 2

Heat the vegetable oil in a wok or large skillet over medium-high heat.

Step 3

Once the oil is hot, add the garlic and chili paste to the pan. Stir-fry for about 30 seconds until fragrant but not burnt.

Step 4

Add the ground chicken to the pan. Break it up with a spatula or wooden spoon and cook for 5-7 minutes, stirring frequently, until the chicken is cooked through and no longer pink.

Step 5

In a small bowl, mix together oyster sauce, soy sauce, fish sauce, sugar, and water to create the stir-fry sauce.

Step 6

Pour the sauce mixture over the cooked chicken and stir well to coat evenly. Cook for another 2-3 minutes to allow the flavors to combine.

Step 7

Add the holy basil leaves to the pan and toss quickly for 30 seconds until wilted. Remove the pan from heat immediately to preserve the aroma of the basil.

Step 8

Serve the stir-fried chicken with freshly steamed jasmine rice on the side.
