Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • 1 pound ground beef
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 5 cups baby spinach, fresh
  • 3 cups cooked brown rice
  • 1 tablespoon low-sodium soy sauce (optional)
  • 0.25 cup grated Parmesan cheese (optional)

Directions

Step 1

Heat a large skillet over medium heat and add olive oil.

Step 2

Once the oil is hot, add the diced onion and sauté for 3-4 minutes until softened.

Step 3

Add the minced garlic to the skillet and cook for 1 minute, stirring frequently, until fragrant.

Step 4

Add the ground beef to the skillet, breaking it apart with a wooden spoon. Cook for 7-8 minutes until fully browned and no pink remains.

Step 5

Season the ground beef with salt, black pepper, paprika, and dried oregano. Stir to evenly coat the meat in the spices.

Step 6

Add the fresh spinach to the skillet in batches, stirring to wilt it down before adding more. This should take about 3-4 minutes in total.

Step 7

Reduce the heat to low and stir in the cooked brown rice, mixing until fully combined with the beef and spinach.

Step 8

If desired, add a tablespoon of soy sauce for extra depth of flavor.

Step 9

Cook on low for another 2-3 minutes to heat the rice through.

Step 10

Serve warm, optionally garnished with grated Parmesan cheese for a richer flavor.
