Preheat your oven to 375°F (190°C).
Cut the tops off of the green bell peppers and remove the seeds and membranes. Set the peppers aside and dice the tops to use in the stuffing mixture.
Heat the olive oil in a large skillet over medium heat. Add the diced onion, minced garlic, and chopped bell pepper tops. Sauté for 3-5 minutes until softened.
Add the ground beef to the skillet and cook until browned, breaking it apart with a spatula, about 6-8 minutes. Drain any excess grease if necessary.
Stir in the cooked rice, canned diced tomatoes (with their juice), 1/2 cup of tomato sauce, Italian seasoning, paprika, salt, and black pepper. Mix well and simmer for 5 minutes.
Lightly grease a baking dish large enough to hold the peppers upright. Fill each bell pepper with the ground beef mixture, pressing down slightly to pack it in.
In a small bowl, combine the remaining 1/2 cup of tomato sauce with 1/2 cup of water. Pour this mixture into the bottom of the baking dish around the stuffed peppers.
Cover the baking dish tightly with aluminum foil and bake in the preheated oven for 35 minutes.
Remove the foil and sprinkle the shredded cheddar cheese over the tops of the peppers. Return the dish to the oven and bake uncovered for an additional 5-10 minutes, or until the cheese is melted and bubbly.
Remove the stuffed peppers from the oven and allow them to cool for 5 minutes before serving. Enjoy!
