Ingredients

  • 6 pieces green bell peppers
  • 1 pound ground beef
  • 1 cup cooked white rice
  • 1 medium onion, finely diced
  • 2 cloves garlic, minced
  • 14.5 ounces canned diced tomatoes
  • 8 ounces tomato sauce
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup cheddar cheese, shredded
  • 1 tablespoon olive oil
  • 0.5 cup water

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Cut the tops off of the green bell peppers and remove the seeds and membranes. Set the peppers aside and dice the tops to use in the stuffing mixture.

Step 3

Heat the olive oil in a large skillet over medium heat. Add the diced onion, minced garlic, and chopped bell pepper tops. Sauté for 3-5 minutes until softened.

Step 4

Add the ground beef to the skillet and cook until browned, breaking it apart with a spatula, about 6-8 minutes. Drain any excess grease if necessary.

Step 5

Stir in the cooked rice, canned diced tomatoes (with their juice), 1/2 cup of tomato sauce, Italian seasoning, paprika, salt, and black pepper. Mix well and simmer for 5 minutes.

Remove the foil and sprinkle the shredded cheddar cheese over the tops of the peppers. Return the dish to the oven and bake uncovered for an additional 5-10 minutes, or until the cheese is melted and bubbly.

Step 10

Remove the stuffed peppers from the oven and allow them to cool for 5 minutes before serving. Enjoy!
