  • 1 teaspoon Smoked paprika
  • 1 Bay leaf
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 cup Water (if needed to thin soup)
  • 2 tablespoons Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

In a large soup pot or Dutch oven, heat the olive oil over medium-high heat.

Add the ground beef and cook until browned, breaking it up with a wooden spoon as it cooks. Drain any excess grease if necessary.

Add the diced onion, carrots, and celery to the pot. Sauté for 5-7 minutes, or until the vegetables begin to soften.
