Ingredients

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 yellow onion, diced
  • 2 carrots, peeled and diced
  • 2 garlic cloves, minced
  • 1 cup frozen peas
  • 1 cup frozen corn kernels
  • 2 tablespoons tomato paste
  • 0.75 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons all-purpose flour
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 pounds russet potatoes, peeled and cubed
  • 4 tablespoons butter
  • 0.5 cup milk, warmed
  • 0.25 cup grated Parmesan cheese

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Peel and cube the russet potatoes. Place them in a large pot of cold, salted water and bring to a boil. Cook until the potatoes are fork-tender, about 15-20 minutes.

Step 3

While the potatoes cook, heat olive oil in a large skillet over medium heat. Add the diced onion and carrots, cooking until softened, about 5 minutes.

Step 4

Add the minced garlic and cook for an additional minute.

Step 5

Push the vegetables to the side of the skillet and add the ground beef. Cook until browned and fully cooked through, breaking it into small crumbles with a spatula.

Step 6

Stir in the tomato paste, all-purpose flour, and Worcestershire sauce. Cook for 1-2 minutes to eliminate the raw flour taste.

Step 7

Gradually pour in the beef broth, stirring to combine. Add the dried thyme, salt, and black pepper. Simmer for 5 minutes until the mixture thickens slightly.

Step 8

Stir in the frozen peas and corn. Remove from heat and set aside.

Step 9

Once the potatoes are tender, drain them and return them to the pot. Add the butter, warm milk, grated Parmesan cheese, and a pinch of salt. Mash the potatoes until smooth and creamy.

Step 10

Spread the beef and vegetable mixture evenly into the bottom of a 9x13-inch baking dish. Top with the mashed potatoes, spreading them to cover the filling completely.

Step 11

Use the back of a spoon or a fork to create texture on the mashed potato surface for browning.

Step 12

Bake in the preheated oven for 20-25 minutes or until the top is lightly golden and bubbling around the edges.

Step 13

Let the Shepherd's Pie cool for a few minutes before serving. Enjoy your hearty and delicious meal!
