Preheat the oven to 375°F (190°C) and grease a 9x13-inch baking dish.
Bring a large pot of salted water to a boil. Cook the lasagna noodles according to package instructions until al dente. Drain and lay them flat on a clean kitchen towel to cool.
In a large skillet over medium heat, add the olive oil. Cook the onion until softened, about 3-4 minutes. Add the garlic and cook for another minute until fragrant.
Add the ground beef to the skillet, breaking it apart with a spoon, and cook until browned. Stir in 3 cups of chopped spinach and cook until wilted. Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Remove from heat and set aside to cool.
In a mixing bowl, combine ricotta cheese, Parmesan cheese, the remaining spinach, egg, Italian seasoning, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Mix well.
Spread a thin layer (about 1 cup) of marinara sauce on the bottom of the prepared baking dish.
Lay out one lasagna noodle and spread about 2-3 tablespoons of the ricotta mixture evenly over it. Add a layer of the beef and spinach mixture on top. Roll the noodle up tightly and place it seam-side down in the baking dish. Repeat with remaining noodles and filling.
Pour the remaining marinara sauce evenly over the rollups. Sprinkle mozzarella cheese on top.
Cover the dish with aluminum foil and bake for 25 minutes. Then, remove the foil and bake for an additional 15 minutes, or until the cheese is melted and bubbly.
Allow the lasagna rollups to rest for 5 minutes before serving. Serve warm and enjoy!
