Ingredients

  • 4 large Russet potatoes
  • 1 lb Ground beef
  • 1 medium (diced) Yellow onion
  • 2 minced Garlic cloves
  • 1 tsp Ground cumin
  • 1 tsp Chili powder
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 1 cup Salsa
  • 1 cup (shredded) Cheddar cheese
  • 0.5 cup Sour cream
  • 2 stalks (sliced) Green onions
  • 1 tbsp Olive oil

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Scrub and dry the russet potatoes. Prick each potato several times with a fork. Rub each one with olive oil and place them on a baking sheet.

Step 3

Bake the potatoes in the preheated oven for 50-60 minutes or until tender when pierced with a fork.

While the potatoes bake, heat a skillet over medium heat. Add the ground beef and cook until browned, breaking it apart with a wooden spoon. Drain any excess fat.

Add the diced onion and minced garlic to the skillet with the ground beef. Sauté for 2-3 minutes until the onion is soft and translucent.

Stir in the ground cumin, chili powder, salt, and black pepper. Mix well to evenly coat the beef.

Return the stuffed potatoes to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
