Scrub and dry the russet potatoes. Prick each potato several times with a fork. Rub each one with olive oil and place them on a baking sheet.

Sprinkle the remaining shredded cheddar cheese over the stuffed potatoes.
Return the stuffed potatoes to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
Remove the potatoes from the oven and let cool for a few minutes. Top each one with a dollop of sour cream, a spoonful of the remaining salsa, and a sprinkle of sliced green onions.
