Ingredients

  • 4 cups water
  • 0.5 teaspoons salt
  • 1 cup quick-cooking grits
  • 4 tablespoons unsalted butter
  • 2 cups shredded sharp cheddar cheese
  • 3 large eggs
  • 1 cup milk
  • 1 pound breakfast sausage, crumbled and cooked
  • 0.5 teaspoons black pepper
  • 0.5 teaspoons paprika
  • 0.25 cup green onions, chopped (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.

Step 2

In a medium saucepan, bring the water and salt to a boil over medium-high heat.

Step 3

Gradually whisk in the grits, reduce the heat to low, and cook for 5-7 minutes, stirring occasionally, until thickened.

Step 4

Remove the saucepan from heat and stir in the butter and 1 1/2 cups of the shredded sharp cheddar cheese until melted and combined.

Step 5

In a small bowl, whisk together the eggs and milk until smooth. Temper the egg mixture by slowly adding a few tablespoons of the hot grits mixture, whisking constantly to prevent the eggs from scrambling.

Step 6

Stir the tempered egg mixture back into the saucepan with the grits until fully incorporated.

Step 7

Fold in the cooked breakfast sausage, black pepper, and paprika. If using, stir in the chopped green onions for added flavor.

Step 8

Pour the grits mixture into the prepared baking dish and spread it evenly.

Step 9

Sprinkle the remaining 1/2 cup of shredded cheddar cheese over the top.

Step 10

Bake in the preheated oven for 30-35 minutes, or until the casserole is set and the top is golden and bubbly.

Step 11

Remove from the oven and let the casserole rest for 5 minutes before serving.

Step 12

Serve warm, garnished with additional green onions if desired.
