Ingredients

  • 4 medium-sized zucchini
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1.5 cups cherry tomatoes
  • 1 cup fresh mozzarella balls (bocconcini or ciliegine)
  • 0.5 cup fresh basil leaves
  • 2 tablespoons balsamic glaze
  • 1 clove garlic

Directions

Step 1

Preheat a grill or grill pan over medium-high heat.

Slice the zucchinis lengthwise into 1/4-inch thick strips. Pat them dry with a paper towel to remove excess moisture.

Step 3

In a small bowl, mix 2 tablespoons of olive oil, salt, and black pepper. Brush this mixture onto both sides of each zucchini slice.
