Ingredients

  • 1.5 cups Wild mushrooms (e.g., cremini, shiitake, oyster)
  • 3 tablespoons Unsalted butter
  • 1 tablespoon Extra virgin olive oil
  • 1 Garlic clove, minced
  • 0.5 teaspoons Fresh thyme leaves
  • 0.25 teaspoons Salt
  • 0.25 teaspoons Ground black pepper
  • 4 ounces Brie cheese, sliced
  • 4 Rustic bread slices (e.g., sourdough)
  • 1 tablespoon Fresh parsley, finely chopped
  • 1 teaspoon Parmesan cheese, grated (optional)

Directions

Step 1

Clean the wild mushrooms with a damp paper towel and slice them into small, even pieces.

Step 2

In a medium skillet, heat 1 tablespoon of butter and the olive oil over medium heat.

Step 3

Add the minced garlic to the skillet and sauté for 30 seconds, until fragrant.

Step 4

Stir in the sliced wild mushrooms and sprinkle with salt, black pepper, and fresh thyme. Cook for 5–7 minutes, stirring occasionally, until the mushrooms are tender and any liquid has evaporated.

Step 5

Remove the mushroom mixture from the heat and set aside to cool slightly.

Step 6

Spread the remaining 2 tablespoons of butter evenly on one side of each slice of bread. Sprinkle the parsley and grated Parmesan cheese (if using) over the buttered sides for extra flavor.

Step 7

Place two slices of bread, buttered side down, on a clean work surface. Arrange half the Brie slices over the unbuttered side of each bread slice.

Step 8

Top the Brie with the sautéed mushroom mixture, followed by the remaining Brie slices. Place the other two slices of bread on top, buttered side up.

Step 9

Preheat a large nonstick skillet or griddle over medium-low heat.

Step 10

Carefully place the sandwiches onto the hot skillet. Cook for 3–4 minutes on each side, pressing gently with a spatula, until the bread is golden brown and crispy and the Brie has melted.

Step 11

Remove the sandwiches from the skillet and let them cool for 1–2 minutes before slicing in half.

Step 12

Serve warm and enjoy your Grilled Wild Mushroom and Brie Cheese Sandwich!
