  • 2 medium Yellow squash
  • 1 large Red bell pepper

  • 1 medium Red onion

  • 4 tablespoons Olive oil

  • 0.5 teaspoon Black pepper
  • 3 tablespoons Fresh tarragon leaves
  • 1 teaspoon Dijon mustard
  • 3 tablespoons Red wine vinegar
  • 1 teaspoon Honey
  • 6 cups Mixed greens

Directions

Step 1

Preheat a grill or grill pan to medium-high heat.

Step 2

Slice the zucchini, yellow squash, and eggplant lengthwise into 1/4-inch-thick strips. Core and quarter the red bell pepper, and peel and slice the red onion into 1/2-inch-thick rings. Trim the woody ends off the asparagus.
