  • 1 large Red bell pepper
  • 1 small Eggplant
  • 3 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 4 pieces Ciabatta rolls
  • 8 slices Fresh mozzarella cheese
  • 0.5 cup Basil pesto
  • 1 cup Baby spinach

Directions

Step 1

Preheat a grill pan or outdoor grill over medium-high heat.

Step 2

Slice the zucchini and eggplant into thin rounds, about 1/4-inch thick. Cut the red bell pepper into large flat pieces by removing the stem, seeds, and membranes.

Step 3

In a large bowl, toss the zucchini, eggplant, and bell pepper pieces with olive oil, salt, and black pepper until evenly coated.

Grill the vegetables for 3-4 minutes on each side until tender and lightly charred. Remove from the grill and set aside.
