Ingredients

  • 1 pound ground turkey
  • 1 large poblano pepper
  • 0.5 cup dill pickles
  • 0.25 cup red onion
  • 2 tablespoons fresh cilantro
  • 1 tablespoon lime juice
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 4 slices Monterey Jack cheese
  • 4 burger buns
  • 1 tablespoon vegetable oil
  • 4 leaves lettuce
  • 0.25 cup mayonnaise

Directions

Step 1

Preheat your grill or grill pan to medium-high heat.

Step 2

Roast the poblano pepper directly over the flame (or on the grill) until its skin is blistered and charred, about 5-7 minutes. Place it in a bowl and cover with plastic wrap to let it steam for 5 minutes. Once cooled, peel off the charred skin, remove the seeds, and finely chop the poblano.

In a small mixing bowl, combine the chopped poblano pepper, diced dill pickles, red onion, cilantro, lime juice, and a pinch of salt. Stir well to make the relish and set aside.
