Ingredients

  • 450 grams Fresh tuna steaks
  • 60 grams Panko breadcrumbs
  • 3 stalks Green onions, finely chopped
  • 2 tablespoons Soy sauce
  • 1 teaspoon Sesame oil
  • 1 teaspoon Fresh ginger, grated
  • 1 clove Garlic, minced
  • 1 piece Egg, lightly beaten
  • 1 teaspoon Wasabi paste
  • 80 grams Mayonnaise
  • 4 pieces Burger buns
  • 4 pieces Lettuce leaves
  • 4 slices Tomato slices
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Olive oil

Directions

Step 1

Finely chop the fresh tuna steaks or pulse them briefly in a food processor until roughly minced. Do not overprocess.

Step 2

In a large mixing bowl, combine the minced tuna, panko breadcrumbs, green onions, soy sauce, sesame oil, grated ginger, minced garlic, beaten egg, salt, and black pepper. Mix gently until the ingredients are just combined.

Step 3

Divide the mixture into 4 equal portions and form each portion into a burger patty, about 1.5 cm (0.6 inches) thick. Place the patties on a plate and refrigerate for 15 minutes to help them firm up.

While the patties are chilling, prepare the wasabi mayonnaise. In a small bowl, stir together the wasabi paste and mayonnaise until smooth. Set aside.
