Ingredients

  • 4 medium Summer squash
  • 3 tablespoons Soy sauce
  • 2 tablespoons Lime juice
  • 1 tablespoon Honey
  • 1 tablespoon Sesame oil
  • 2 cloves Garlic
  • 1 teaspoon Fresh ginger
  • 0.5 teaspoon Red chili flakes
  • 2 tablespoons Cilantro
  • 1 tablespoon Vegetable oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Wash and dry the summer squash. Slice into 1/4-inch thick lengthwise strips or rounds, depending on your grilling preference.

Step 2

In a mixing bowl, prepare the marinade by combining soy sauce, lime juice, honey, sesame oil, minced garlic, grated ginger, and red chili flakes. Whisk until well blended.

Step 3

Place the sliced squash into a large zip-top bag or shallow dish. Pour the marinade over the squash, ensuring it's evenly coated. Seal the bag or cover the dish with plastic wrap, and let it marinate at room temperature for 20-30 minutes.

Step 4

Preheat your grill or grill pan to medium-high heat. Lightly brush the grates or pan with vegetable oil to prevent sticking.

Step 5

Remove the squash from the marinade, allowing any excess marinade to drip off. Reserve the rest of the marinade for brushing later.

Step 6

Place the squash slices on the grill in a single layer. Grill for 3-4 minutes per side, or until tender and lightly charred.

Step 7

While grilling, brush the squash with the reserved marinade for extra flavor. Avoid over-brushing to prevent burning.

Step 8

Once grilled, transfer the squash to a serving platter. Sprinkle with chopped cilantro, a pinch of salt, and freshly cracked black pepper to taste.

Step 9

Serve immediately as a side dish or over rice for a light, healthy main course.
