Ingredients

  • 4 large Portabella mushroom caps
  • 3 tablespoons Olive oil
  • 2 cloves Garlic cloves, minced
  • 2 cups Fresh spinach, chopped
  • 1 cup Breadcrumbs
  • 1 cup Parmesan cheese, grated
  • 1 cup Mozzarella cheese, shredded
  • 2 tablespoons Fresh parsley, chopped
  • 1 teaspoon Dried Italian seasoning
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Clean the portabella mushroom caps by gently wiping them with a damp paper towel. Remove the stems and use a spoon to scrape out the gills for a smoother surface for stuffing.

Step 2

Brush the mushroom caps lightly with 1 tablespoon of olive oil on both sides and set aside.

Step 3

Heat 2 tablespoons of olive oil in a skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.

Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and set aside to cool slightly.
