Servings: 4

Ingredients

  • 12 pieces large button mushrooms
  • 4 ounces cream cheese
  • 1 ounce grated Parmesan cheese
  • 2 cloves garlic
  • 2 tablespoons parsley
  • 2 stalks green onions
  • 3 tablespoons breadcrumbs
  • 1 tablespoon olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Clean the mushrooms by wiping them with a damp paper towel. Carefully remove the stems and set them aside. Hollow out the caps slightly if needed for the filling.

Step 2

Finely chop the mushroom stems, garlic, parsley, and green onions.

Step 3

In a skillet, heat the olive oil over medium heat. Add the chopped mushroom stems, garlic, and green onions. Sauté for 3-4 minutes or until softened.

Step 4

Transfer the sautéed mixture to a mixing bowl and let it cool slightly.

Step 5

Add cream cheese, grated Parmesan cheese, breadcrumbs, parsley, salt, and black pepper to the bowl with the cooled mushroom mixture. Stir until well combined.

Step 6

Spoon the filling evenly into each mushroom cap, packing it slightly to ensure it stays in place.

Step 7

Preheat the grill to medium heat. Lightly brush the grill grates with oil to prevent sticking.

Step 8

Place the stuffed mushrooms on the grill, filling side up. Close the grill lid and cook for 7-10 minutes or until the mushrooms are tender and the filling is slightly browned on top.

Step 9

Carefully remove the mushrooms from the grill and let them cool for a minute or two before serving.

Step 10

Garnish with additional chopped parsley if desired, and enjoy!
