Ingredients

  • 4 links Kielbasa sausage
  • 8 slices Rye bread
  • 8 slices Swiss cheese
  • 2 cups Sauerkraut
  • 2 tablespoons Whole grain mustard
  • 4 tablespoons Butter
  • 1 cup Russian dressing
  • 1 teaspoon Caraway seeds

Directions

Step 1

Preheat your grill or griddle to medium heat.

Step 2

Using a sharp knife, split each kielbasa link lengthwise without cutting all the way through, so it opens like a book. Place the split sausages cut-side down on the grill or griddle and cook for 4-5 minutes per side until nicely charred and heated through. Set aside.

Step 3

In a medium saucepan over medium heat, combine the sauerkraut, whole grain mustard, and caraway seeds. Stir well and cook for 5-7 minutes until the sauerkraut is warmed and infused with the mustard. Remove from heat.

Step 4

Butter one side of each slice of rye bread. Lay 4 slices, butter-side down, on a clean working surface. Spread a generous layer of Russian dressing on the unbuttered side.

Step 5

Place a slice of Swiss cheese on top of the Russian dressing layer, followed by one split kielbasa link (cut-side up), a scoop of the warm mustard sauerkraut, and another slice of Swiss cheese. Top each sandwich with another slice of rye bread, butter-side up.

Step 6

Place the sandwiches on the preheated grill or griddle. Cook for 3-4 minutes on one side until the bread is golden and crisp, then carefully flip and cook the other side for another 3-4 minutes until the cheese is melted and the bread is toasted.

Step 7

Remove the sandwiches from the grill, slice in half, and serve hot. Enjoy your Grilled Split Kielbasa Reubens with Warm Mustard Sauerkraut!
