Ingredients

  • 4 pieces Red snapper fillets
  • 0.25 cup Olive oil
  • 2 tablespoons Lemon juice
  • 3 pieces Garlic cloves, minced
  • 2 tablespoons Fresh parsley, chopped
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 4 slices Lemon slices
  • 4 sprigs Fresh thyme sprigs

Directions

Step 1

Preheat your grill to medium-high heat.

Step 2

In a small bowl, mix together olive oil, lemon juice, minced garlic, chopped parsley, dried oregano, salt, and pepper to create the marinade.

Step 3

Place the red snapper fillets in a shallow dish or a resealable plastic bag.

Step 4

Pour the marinade over the snapper, ensuring each fillet is well coated. Refrigerate and allow to marinate for at least 10 minutes, but no longer than 30 minutes to prevent the acid from breaking down the fish too much.

Step 5

Once marinated, remove the snapper from the fridge and allow it to sit at room temperature for about 5 minutes before grilling.

Step 6

Lightly oil the grill grates to prevent sticking.

Step 7

Place the snapper fillets on the grill, skin-side down, if applicable. Add the lemon slices and thyme sprigs for added flavor.

Step 8

Grill the fillets for about 4-5 minutes per side, or until the fish easily flakes with a fork and has a nicely charred exterior.

Step 9

Carefully remove the snapper from the grill and let it rest for a few minutes before serving.

Step 10

Serve the grilled snapper with your choice of sides, such as a fresh salad or steamed vegetables, and enjoy the burst of flavors from the lemon herb marinade.
