Ingredients

  • 4 pieces (6-8 oz each) sirloin steak
  • 3 tablespoons olive oil
  • 3 cloves (minced) garlic
  • 2 teaspoons sea salt
  • 1 teaspoon black pepper
  • 1 cup (pitted and chopped) green olives
  • 1 cup (pitted and chopped) kalamata olives
  • 2 tablespoons capers
  • 2 tablespoons (freshly chopped) parsley
  • 2 tablespoons lemon juice
  • 0.5 teaspoon red pepper flakes
  • 2 tablespoons butter

Directions

Step 1

Preheat your grill to medium-high heat (about 400°F/200°C).

Step 2

Pat the sirloin steaks dry with a paper towel, then rub them with 2 tablespoons of olive oil. Season both sides evenly with 1.5 teaspoons of sea salt and 1 teaspoon of black pepper.

Step 3

In a small skillet over medium heat, add the remaining 1 tablespoon of olive oil. Sauté the minced garlic for about 1 minute until fragrant but not browned. Set aside.

Step 4

In a mixing bowl, combine the green olives, kalamata olives, sautéed garlic, capers, parsley, lemon juice, red pepper flakes, and the remaining 0.5 teaspoon of sea salt. Stir well to create the olive sauce.

Step 5

Place the steaks on the preheated grill and cook for 4-6 minutes per side for medium-rare, or adjust the timing to your desired level of doneness. Use a meat thermometer to ensure the internal temperature is 135°F (57°C) for medium-rare or 145°F (63°C) for medium.

Step 6

While the steaks are cooking, melt the butter in the skillet with the olive sauce mixture over low heat. Stir until the butter is fully incorporated into the sauce.

Step 7

Remove the steaks from the grill and let them rest for 5 minutes, loosely tented with foil to retain their juices.

Step 8

Plate the steaks and generously spoon the warm olive sauce over the top of each steak.

Step 9

Serve immediately with your choice of side dishes, such as roasted vegetables, mashed potatoes, or fresh salad.
