Ingredients

  • 1 pound Large shrimp, peeled and deveined
  • 2 whole Peaches, halved and pitted
  • 4 whole Baby bok choy, halved lengthwise
  • 8 units Wooden skewers, soaked in water for 30 minutes
  • 3 tablespoons Olive oil
  • 2 tablespoons Soy sauce
  • 1 tablespoon Honey
  • 2 cloves Minced garlic
  • 0.5 teaspoons Ground ginger
  • 3 tablespoons Peanut butter
  • 0.25 cup Coconut milk
  • 2 tablespoons Lime juice
  • 0.25 teaspoons Crushed red pepper flakes
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 2 tablespoons Fresh cilantro, chopped (optional for garnish)

Directions

Step 1

Preheat your grill to medium-high heat. If using a stovetop grill pan, heat over medium-high flame.

In a small bowl, whisk together 2 tablespoons of olive oil, soy sauce, honey, garlic, ground ginger, salt, and black pepper. Set aside to use as the marinade.
