  • 1 lemon, cut into wedges (for serving)
  • 8 metal or wooden skewers (soaked in water if wooden)

Directions

Step 1

Preheat your grill to medium-high heat or heat a grill pan over medium-high on the stovetop.

In a large bowl, combine shrimp, red bell pepper pieces, zucchini slices, and red onion wedges. Drizzle with olive oil, then season with kosher salt and black pepper. Toss until everything is evenly coated.
