Ingredients

  • 20 pieces large shrimp, peeled and deveined
  • 20 slices chorizo sausage, sliced into 1/4-inch rounds
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon paprika
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 piece lemon, cut into wedges for serving
  • 2 tablespoons fresh parsley, chopped for garnish (optional)
  • 10 pieces wooden or metal skewers

Directions

Step 1

If using wooden skewers, soak them in water for at least 30 minutes to prevent them from burning on the grill.

Step 2

In a large bowl, combine olive oil, minced garlic, paprika, ground cumin, salt, and black pepper. Mix well to form a marinade.

Step 3

Add the shrimp to the bowl of marinade and toss to coat evenly. Let the shrimp marinate for 10 minutes while you prepare the rest of the ingredients.

Step 4

Preheat your grill or grill pan to medium-high heat.

Step 5

Thread the skewers by alternating one piece of shrimp and one slice of chorizo until each skewer is filled. Repeat with all skewers.

Step 6

Place the skewers on the hot grill and cook for about 2-3 minutes per side, or until the shrimp turn pink and opaque and the chorizo is slightly charred.

Step 7

Remove the skewers from the grill and transfer them to a serving plate.

Step 8

Garnish with freshly chopped parsley (if desired) and serve hot with lemon wedges on the side.
