Ingredients

  • 400 g Shiitake mushrooms
  • 3 tbsp Olive oil
  • 2 cloves Garlic, minced
  • 1 tbsp Soy sauce
  • 2 tbsp Fresh lemon juice
  • 0.25 tsp Ground black pepper
  • 100 g Arugula
  • 0.25 tsp Salt
  • 30 g Parmesan cheese, shaved

Directions

Step 1

Clean the shiitake mushrooms by wiping them gently with a damp paper towel. Remove and discard the stems, as they are tough and not suitable for grilling.

Step 2

In a large bowl, whisk together 2 tablespoons of olive oil, minced garlic, soy sauce, lemon juice, ground black pepper, and salt to create the marinade.

Step 3

Add the shiitake mushrooms to the bowl and toss well to coat them evenly with the marinade. Let them sit for 5 minutes to absorb the flavors.

Step 4

Preheat a grill or grill pan over medium heat. Brush the grill grates lightly with 1 tablespoon of olive oil to prevent sticking.

Step 5

Place the marinated shiitake mushrooms on the grill, gill side up. Grill for 4-5 minutes per side, or until the mushrooms are tender and have developed visible grill marks.

Step 6

While the mushrooms are grilling, arrange the arugula on a large serving platter or divide it among individual plates.

Step 7

Once the mushrooms are done, remove them from the grill and let them cool slightly. Then, slice them into bite-sized pieces if desired.

Step 8

Place the grilled mushrooms on top of the bed of arugula.

Step 9

Top the salad with shaved Parmesan cheese and drizzle with any remaining marinade, if desired.

Step 10

Serve immediately as a light appetizer or side dish.
