Ingredients

  • 4 pieces Salmon fillets
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoons Ground black pepper
  • 2 tablespoons Lemon juice
  • 1 teaspoon Garlic powder
  • 1 large Cucumber
  • 1 cup Greek yogurt
  • 2 tablespoons Fresh dill (chopped)
  • 2 tablespoons Fresh mint leaves (chopped)
  • 1 teaspoon Lemon zest
  • 1 teaspoon Honey
  • 1 teaspoon Water

Directions

Step 1

Preheat your grill or grill pan to medium-high heat.

Step 2

Pat the salmon fillets dry with a paper towel and place them on a plate. Brush both sides with olive oil and season with salt, pepper, garlic powder, and a tablespoon of lemon juice.

Step 3

Slice the cucumber thinly (using a mandolin if available) and place the slices in a mixing bowl.

Step 4

In a separate bowl, whisk together Greek yogurt, chopped dill, chopped mint, lemon zest, honey, water, and a pinch of salt. Mix until smooth and creamy.

Step 5

Pour the yogurt mixture over the cucumber slices and gently toss to coat them evenly. Set the salad aside while you grill the salmon.

Step 6

Place the salmon fillets on the preheated grill skin-side down. Grill for 4-5 minutes on each side, or until the fish is cooked through and easily flakes with a fork. Remove from the grill.

Step 7

Serve each salmon fillet with a generous portion of cucumber yogurt salad on the side. Garnish with additional fresh dill or lemon wedges if desired.

Step 8

Enjoy your grilled salmon with cucumber yogurt salad while still warm!
