Ingredients

  • 4 pieces (6 ounces each) salmon fillets
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 cups cherry tomatoes
  • 1 small (chopped) red onion
  • 1 small (seeded and chopped) jalapeño pepper
  • 2 minced garlic cloves
  • 1 juiced lime
  • 2 tablespoons (chopped) cilantro

Directions

Step 1

Preheat your grill to medium-high heat.

Step 2

Drizzle 1 tablespoon of olive oil over the salmon fillets and season them with 1/2 teaspoon of salt and 1/2 teaspoon of black pepper. Set aside.

Step 3

Place the cherry tomatoes in a bowl and toss them with 1 tablespoon of olive oil. Spread them onto a grill-safe metal basket or skewer them.

Step 4

Grill the cherry tomatoes for 6-8 minutes, turning occasionally, until they char and blister. Remove from the grill and let them cool slightly.

Step 5

Meanwhile, place the salmon fillets on the preheated grill, skin-side down if the skin is on. Grill them for 4-5 minutes per side, or until the salmon is cooked through and flakes easily with a fork. Remove from the grill and let rest.

Step 6

In a mixing bowl, combine the charred tomatoes, chopped red onion, chopped jalapeño, minced garlic, lime juice, chopped cilantro, and the remaining 1 tablespoon of olive oil. Season the salsa with the remaining 1/2 teaspoon of salt and 1/2 teaspoon of black pepper. Mix well.

Step 7

Serve the grilled salmon fillets topped with a generous spoonful of the charred tomato salsa. Garnish with extra cilantro if desired.
