Ingredients

  • 4 pieces (6-ounce each) Salmon fillets
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 8 leaves (chopped) Fresh basil leaves
  • 3 large Egg yolks
  • 0.5 cup Unsalted butter
  • 1 tablespoon Fresh lemon juice
  • 0.25 teaspoon Cayenne pepper
  • 1 tablespoon Water

Directions

Step 1

Preheat your grill or grill pan to medium-high heat.

Step 2

Pat the salmon fillets dry with a paper towel and brush them lightly with olive oil. Sprinkle with salt and ground black pepper on both sides.

Place the salmon, skin-side down, on the grill. Cook for 4-5 minutes, then carefully flip and grill for another 4-5 minutes until the salmon is opaque and flakes easily with a fork.

While the salmon is grilling, prepare the hollandaise sauce. In a small saucepan, melt the butter over low heat until fully melted. Set aside and keep warm.

In a heatproof bowl, whisk together the egg yolks, water, and lemon juice. Place the bowl over a saucepan of simmering water (making sure the bottom of the bowl does not touch the water). Whisk continuously until the mixture thickens slightly, about 2-3 minutes.
