Ingredients

  • 4 pieces salmon fillets
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 4 medium ripe tomatoes
  • 2 pieces chipotle peppers in adobo sauce
  • 2 pieces garlic cloves
  • 1 small white onion
  • 1 teaspoon smoked paprika
  • 1 tablespoon honey
  • 1 tablespoon lime juice
  • 2 tablespoons fresh cilantro
  • 1 tablespoon vegetable oil

Directions

Step 1

Preheat your grill to medium-high heat.

Step 2

Season the salmon fillets with salt and black pepper, and drizzle with 1 tablespoon of olive oil. Set aside.

Step 3

To prepare the smokey tomato chipotle sauce, heat 1 tablespoon of vegetable oil in a pan over medium heat.

Step 4

Dice the tomatoes, garlic, and onion. Add them to the pan and sauté for 5-7 minutes, until softened.

Step 5

Stir in the chipotle peppers, smoked paprika, and honey. Cook for another 2 minutes, then remove from heat.

Step 6

Allow the mixture to cool slightly, then transfer to a blender. Add the lime juice and blend until smooth.

Step 7

Pour the sauce back into the pan and simmer for 5 minutes to thicken slightly. Stir in chopped cilantro and set aside.

Step 8

Brush the grill grates with remaining olive oil. Place the salmon fillets skin-side down on the grill.

Step 9

Grill the salmon for 4-5 minutes per side, until it is cooked through and has nice grill marks. Avoid flipping too often to prevent sticking.

Step 10

Serve the grilled salmon hot, generously topped with the smokey tomato chipotle sauce. Garnish with extra cilantro, if desired.
