Ingredients

  • 4 whole Fresh peaches
  • 60 ml Dark spiced rum
  • 2 tbsp Brown sugar
  • 150 g Mascarpone cheese
  • 60 ml Heavy cream
  • 1 tbsp Honey
  • 1 tsp Orange blossom water
  • 0.5 tsp Vanilla extract
  • 1 tbsp Butter
  • 2 tbsp Chopped pistachios
  • 4 leaves Fresh mint leaves (optional, for garnish)

Directions

Step 1

Wash the peaches thoroughly and cut them in half. Remove the pits carefully.

Step 2

In a small bowl, mix the spiced rum and brown sugar until the sugar dissolves completely.

Step 3

Brush each peach half with the rum and sugar mixture, ensuring an even coat on the flesh side.

Step 4

Preheat your grill or grill pan to medium heat and grease the surface lightly with butter to prevent sticking.

Step 5

Place the peaches flesh-side down onto the grill and cook for 3-4 minutes, or until grill marks appear and the peaches start to caramelize. Flip and cook for an additional 2 minutes on the skin side. Remove from heat and set aside.

Step 6

While the peaches cool slightly, prepare the mascarpone orange blossom cream. In a mixing bowl, whisk together mascarpone cheese, heavy cream, honey, orange blossom water, and vanilla extract until smooth and creamy. Adjust sweetness with more honey if desired.

Step 7

To serve, place two peach halves on each plate. Add a dollop of the mascarpone cream on the side or between the peach halves.

Step 8

Sprinkle the grilled peaches with chopped pistachios for crunch and garnish with fresh mint leaves if desired.

Step 9

Serve immediately and enjoy the warm, fragrant peaches paired with the cool and creamy mascarpone topping.
