Ingredients

  • 2 whole Romaine lettuce hearts
  • 2 tablespoons Olive oil
  • 0.5 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 0.5 cups Goat cheese
  • 0.25 cups Dried cranberries
  • 0.25 cups Pecans
  • 2 tablespoons Balsamic glaze

Directions

Step 1

Preheat your grill or grill pan to medium-high heat.

Step 2

Rinse the romaine hearts and pat them completely dry with paper towels. Slice them in half lengthwise, keeping the core intact so the leaves stay together.

Step 3

Brush the cut sides of the romaine halves with olive oil and sprinkle evenly with salt and black pepper.

Step 4

Place the romaine halves, cut side down, on the preheated grill. Grill for 2-3 minutes, or until the edges are slightly charred and the lettuce is warmed through. Remove from the grill and set on a serving platter.

Step 5

While the romaine cools slightly, toast the pecans in a dry skillet over medium heat for 2-3 minutes, stirring frequently, until fragrant and lightly browned. Remove from heat and set aside.

Step 6

Crumble the goat cheese evenly over the grilled romaine halves.

Step 7

Sprinkle the dried cranberries and toasted pecans over the tops of the romaine.

Step 8

Drizzle the balsamic glaze lightly over the dish for a finishing touch.

Step 9

Serve immediately as a warm salad or side dish. Enjoy!
