Ingredients

  • 4 large Flour tortillas
  • 1 cup (crumbled) Feta cheese
  • 2 cups Fresh baby spinach
  • 1 cup (shredded) Mozzarella cheese
  • 0.5 cup (chopped) Pitted Kalamata olives
  • 2 tablespoons (chopped) Fresh parsley
  • 1 teaspoon Lemon zest
  • 1 tablespoon Lemon juice
  • 1 tablespoon Extra-virgin olive oil
  • 1 clove (minced) Garlic
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons (softened) Butter

Directions

Step 1

In a small bowl, prepare the olive lemon relish by mixing the chopped Kalamata olives, fresh parsley, lemon zest, lemon juice, olive oil, minced garlic, salt, and black pepper. Stir well and set aside for the flavors to meld.

Step 2

Lay out the flour tortillas on a flat work surface. On half of each tortilla, evenly spread a layer of crumbled feta cheese, fresh baby spinach, and shredded mozzarella cheese.

Step 3

Fold each tortilla in half to create a semicircle, pressing gently to seal the edges.

Step 4

Preheat a grill pan or large nonstick skillet over medium heat. Lightly butter the outside of each tortilla to ensure a golden, crispy finish during grilling.

Step 5

Place the quesadillas on the heated grill pan or skillet. Cook for 2-3 minutes on each side, pressing gently with a spatula, until the tortillas are crisp and golden brown and the cheese has melted.

Step 6

Remove the quesadillas from the grill and let cool for 1 minute before slicing into wedges.

Step 7

Serve the grilled quesadillas warm, topped with or alongside the olive lemon relish. Enjoy your Mediterranean-inspired dish!
