Ingredients

  • 4 slices Pumpernickel bread
  • 4 slices Gouda cheese
  • 2 tablespoons Unsalted butter
  • 2 teaspoons Whole-grain mustard
  • 1 teaspoon Honey
  • 1 handful Baby spinach (optional)

Directions

Step 1

Spread 1/2 teaspoon of whole-grain mustard on one side of each slice of pumpernickel bread. For a slight sweetness, drizzle a thin line of honey over the mustard.

Step 2

Place one slice of Gouda cheese on each of two slices of the bread.

Step 3

If using baby spinach, layer a handful of leaves evenly over the cheese.

Top with another slice of Gouda cheese, then place the remaining mustard-spread bread slices on top, mustard-side down, forming two sandwiches.
