Ingredients

  • 4 pieces Portobello mushrooms
  • 2 pieces Shallots
  • 3 tablespoons Olive oil
  • 2 tablespoons Dijon mustard
  • 2 teaspoons Fresh rosemary
  • 2 cloves Garlic
  • 1 tablespoon Red wine vinegar
  • 0.5 teaspoons Kosher salt
  • 0.25 teaspoons Black pepper
  • 1 teaspoon Honey (optional)
  • 1 tablespoon Cooking spray or neutral oil

Directions

Step 1

Clean the portobello mushrooms by wiping them with a damp paper towel to remove any dirt. Gently remove the stems and scrape out the gills with a spoon if desired (optional).

Step 2

Peel and thinly slice the shallots; set them aside.

Step 3

In a small bowl, whisk together olive oil, Dijon mustard, finely chopped rosemary, minced garlic, red wine vinegar, kosher salt, black pepper, and honey (if using) to create the marinade.

Step 4

Place the mushrooms in a shallow dish and brush or drizzle the marinade evenly over the mushrooms, making sure to coat both sides. Let them marinate for at least 10 minutes while you prepare the grill.

Step 5

Preheat your grill or grill pan to medium-high heat. Lightly grease the grates or surface with cooking spray or neutral oil to prevent sticking.

Step 6

While the mushrooms marinate, heat a small skillet over medium heat. Add 1 tablespoon of olive oil and sauté the sliced shallots until caramelized, about 5-7 minutes. Stir occasionally to prevent burning. Remove from heat and set aside.

Step 7

Place the marinated mushrooms on the preheated grill, cap side down. Grill for 4-5 minutes per side, or until tender and slightly charred.

Step 8

Transfer the grilled mushrooms to a platter and spoon the caramelized shallots on top.

Step 9

Serve immediately as a main dish or alongside your favorite sides, such as a fresh salad or roasted vegetables.
